Melissa’s Eat Your Feelings Edible Cookie Dough (Gluten Free or Not)

This cookie dough is SO GOOD! My oldest told me she was in the mood for it – so I messed with my regular cookie recipe until it was good for raw consumption…and it was hard not to eat the entire batch myself.

 

INGREDIENTS

  • 1/2 cup softened butter  (I use 1/4 cup soy free Earth Balance and 1/4 cup Spectrum Organic Shortening)
  • 1/2 cup white sugar
  • 1/4 cup packed light brown sugar
  • 1.5 tsp vanilla
  • 1/2 cups gluten free or regular flour. (This blend is my fave!)
  • 1/4 tsp salt
  • approx. 3 tbsp. milk of choice (If you’re super awesome – use some vanilla or caramel flavored coffee creamer like I did)
  • 2/3 cup chocolate chips

I mixed the first 6 ingredients in my stand mixer. Then I added as much creamer (milk) as I needed to get a cookie dough texture before mixing in the chocolate chips.

I used my large cookie scoop to serve the cookie dough in small glass custard dishes…but you might as well use a large one, because you’ll definitely go back for more!
