What’s cooking in my kitchen this week?
These Macarons. I had a request to make these – and I’m hoping I have time to do it!
Almond Flour Bread – I made this last week – and it’s a really good low-carb bread. Once it cools I cut it into slices and freeze on a parchment paper-lined cookie sheet. Then I stack the slices, wrap in the parchment, and seal in a gallon-sized freezer bag. This bread toasts/thaws easily. Freezing keeps it fresh longer.
Fudge Brownie Lara Bars – Aldi had dates on sale for under $5 this week! These bars are only sweetened with dates, taste like the ones you buy in the store (but cost much less), and are great for an after school snack, breakfast, dessert, or as a treat in a lunch box.

Baked chicken thighs with my favorite Rufus Teague seasoning. My husband’s brother and his beautiful wife who live in Tennessee bought us some of this as part of a Christmas gift. I’m totally hooked. It’s SO GOOD! I may have an unhealthy obsession with it – but seriously – get it.
Anyhow, I’m making homemade corn tortillas to wrap the chicken and will probably serve with steamed green beans.
