Back To School Menu 2017

Hey all! We’re back to school this week! It’s time to toss the “fly-by-the-seat-of-our-pants” attitude and get back into ROUTINE. It can be painful – and I’ll be honest. I’ve done nothing to prepare!

I realized tonight, the night before school starts, at 8:30pm that I haven’t picked out clothes for my first grader one time this summer. She tends to wear her favorites on rotation, so I looked in her drawers and had no idea what still fits her! Thankfully, she was extremely helpful and compliant. I put together 10 different outfits – She picked her favorites, tried them on and we set them aside. Whew.

So, it’s back to meal planning. Maybe this week’s meals will help you jump back into the swing of things!

Amish Baked Oatmeal

Toast (Almond Flour Bread)

Scrambled Eggs



Dinner Leftovers (Hubby)

Salads (Melissa)

Almond Butter Banana Muffins (baked and frozen earlier)

Corndog Muffins (baked and frozen earlier)

Raw fruits and veggies  (strawberries, grapes, carrots cukes)

Pretzels/Popcorn/Babybel Cheese


Monday: Skinny Burrito Bowls (raw veggies & hummus)

Tuesday: Crockpot Chicken Sauce With Peppers & Onions Pasta & Salad

Wednesday: Korean Beef Bowls  with Pad Thai Noodles & Roasted Broccoli

Thursday: Baked Boneless/Skinless Chicken Thighs on Homemade Corn Tortillas, Steamed Green Beans

Friday & Saturday we are spending time with family so I don’t have to cook!
