It took many years to find a blend of gluten free flours that I can actually use cup for cup in real flour recipes (including BREAD) that makes gluten free baked goods taste JUST like their glutenous counterparts (maybe even BETTER). So after some tweaking by my friend Shelly, and my own secret ingredient addition and adjustments – I present to you a recipe that will make you turn your nose up at all others! (And, don’t worry, I’ll share my optional secret ingredient)
This recipe will require you to buy some flours up front, but if you’re already a gluten free baker, you probably have a number of them already in your pantry. I’ll link them for you so you can purchase if you’d like.
I store all of my gluten free flours (and my finished blend) in the freezer and they really last a very long time.

- 3 cups rice flour (white or brown) (often buy on vitacost.com)
- 3 cups gluten free oat flour (often buy on vitacost.com)
- 3 cups tapioca starch
- 1.5 cups almond flour
- 1.5 cup coconut flour
- 3/4 cup cornstarch
- 3.5 Tbsp xantham gum
- 1.5 tsp of my secret ingredient (optional because it can get pricey)
In a very large bowl mix ingredients together with a whisk. Tapioca starch can be a pain to work with because it just gets everywhere so be gentle when adding it!
I use a measuring cup to spoon into a large zip top back or air tight container and usually store in the freezer. I also attach the recipe to my container for easy remakes. I bake A LOT so I like to have a large amount stored. Feel free to cut this recipe in half if you’d like.
Please try this…It’s the only flour recipe you’ll ever want to use again.
Note: One of my favorite online stores, Vitacost, sometimes has gluten free flours a lot cheaper than Amazon. However, bulk prices can be cheaper on Amazon. Be sure to shop around for the best deal. Large bags of almond flour can currently be purchased very inexpensively at Sam’s club.
